It was Cardinal Pacelli, who was soon to become Pope of the Vatican to ask the restaurant a more delicate reworking of carbonara, giving rise to the famous Fettuccini Papalina: a dish where the strong flavor of the egg, mixed with onion and ham, is damped by a fine sprinkling of Parmesan cheese, milder and lighter than the sheep.
